Growing up my mom was very non-traditional when it came to holiday meals. She didn’t love cooking and always wanted to be part of the action, not stuck in the kitchen all day. Any meal that could be prepped ahead of time or was simple to make, was holiday food. Sandwich bars on Easter, popcorn and a movie on Thanksgiving, and fondue on Christmas became our new traditions. And we LOVED them! As I have my own family now, I find myself being drawn to do things like my mom did {even thought I DO LOVE to cook!}, and so I haven’t made many big holidays meals for our little family. This Easter lunch I’m going to try this Taco Salad Bar with Kraft #FreshTake for my family.
At Walmart I purchased the Southwest Three Cheese Fresh Take, although the Italian Parmesan and Cheddar Jack w/ Bacon look great too. You can find them in the refrigerator section near the cheese {fun!} AND…. if you buy a Freshtake you can get $1 off chicken with this FRESH TAKE COUPON. I love that this meal can be almost entirely prepped ahead of time. All the ingredients can be chopped, sliced, diced and ready to go the day before. That way the only thing left to do before the actual meal is cook the meat! While the meat is baking, you can grab all the other prepped food, set the table and be ready to go in about 30 min.
The Fresh Take breading was super easy to use. Combine the crumbs and cheese, coat your meat and bake until cooked. I love how simple it was to have such flavorful meat for our salads. I used both beef and chicken and I will say that the beef didn’t get as crispy because of the fat content of the meat. {which is probably why its not recommended on the package, ha!} They both tasted great, but the chicken was beautifully crisp, too!
My boys LOVE meals like this… they get to serve themselves and choose what goes on their plate.

The great thing about a meal like this is that you can customize it to what you family likes or dislikes and each person can make a Easter lunch that he loves.
